Hey Reader, It's freezing, and the snow this weekend was nuts. While many of us stocked up before the snow, figuring out what to eat for the rest of the week as we try to avoid going out in the frigid temps gets funs. The good news is that you probably have some ingredients in your pantry that you can use to make really tasty meals without having to go buy anything new. These are some of the ones I turn to when I just cannot face going outside to shop. Stay warm and safe! Pantry Fave ClassicsWe do a lot of pasta here, and it's fun to change it up. I like simple sauces that are ready in the time it takes to cook the pasta itself, and this tuna and tomato pasta fits the bill perfectly. I make homemade marinara sauce all.the.time. It's quick and easy, and it turns out great every time (thank you, good canned tomatoes). I use it to make everything from homemade pizzas to spaghetti to stuffed shells to simply buying a good loaf of bread and dipping it. I actually made this Shortcut Chicken salad yesterday for my lunch, although I didn't have any crackers to enjoy it with. Instead, I ate it with a carrot I cut into coins and the last two pieces of Romaine lettuce in the fridge. And since it HAS been snowing, if you've never made snow cream, you want to indulge in this brown sugar snow cream while the snow is still fresh. It's a fun treat that I love as much as my kids do.
